Perfect Pork Tenderloin

Sometimes the simplest ingredients make the best meals. Pork tenderloin is one of my favorite cuts because it tastes great and is a wonderful base for lots of different flavors. Here we rub it with a few seasonings and roast it in the oven. Drizzle it with a simple butter pan sauce and dinner is served.

Makes 4 servings

Preheat the oven to 375°F.

For the tenderloin

Mix together the paprika, onion powder, garlic powder, salt, and pepper in a small bowl. Rub the tenderloin with the olive oil. Rub the seasoning mixture over the entire pork tenderloin.

Heat a large ovenproof skillet over high heat. Place the tenderloin in the pan and sear for 1½ minutes without moving the pork. Turn and continue to sear until browned, 1½ minutes on each side.

Transfer the pan to the oven and roast for 10 to 15 minutes, until an instant-read thermometer inserted in the center reads 135°F to 145°F. Transfer the pork to a plate and let rest for about 5 minutes.

For the pan sauce

Add the stock and butter to the pan and deglaze by scraping the browned bits off the bottom. Sprinkle in the xanthan gum and whisk until fully dissolved.

Slice the tenderloin into ½-inch-thick pieces, drizzle the sauce over the top, and serve warm.
