It’s always good to have a reliable casserole you can throw together and bring to a potluck or a party so you can be sure there will be something for you to eat. This is it. You will never feel left out when you make this. And everyone else will love it too.

Preheat the oven to 350°F. Spray a 9- by 13-inch baking dish with cooking spray.
In a large skillet over medium heat, melt the butter. Add the mushrooms, celery, and onion and cook, stirring, until the onion is translucent, 2 to 3 minutes. Add the sausage and continue to cook, breaking up the sausage with a wooden spoon, until browned, 4 to 5 minutes.
Add the cauliflower rice and cook until the cauliflower is slightly tender, another 3 to 4 minutes. Remove the skillet from the heat and set aside to cool for 5 minutes.
In a large bowl, mix together the beaten eggs, cream, parsley, thyme, sage, rosemary, garlic powder, salt, and pepper. Add the sausage mixture to the egg mixture and mix well. Transfer the mixture to the prepared baking dish. If using, sprinkle the cheddar cheese over the sausage mixture. Bake for 20 to 25 minutes, until a knife comes out clean when inserted into the center of the casserole.
