Low-Carb Pigs in a Blanket

Everyone loves pigs in a blanket, and I was so glad to figure out how to make the “blanket” without traditional flour. My family loves these, so I think I was successful.

Makes 8 servings

Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone mat.

In a microwave-safe bowl, mix together the mozzarella, almond flour, and cream cheese and heat in the microwave oven for 1 minute. Add the egg and mix it into the other ingredients until they come together into a dough. Let the dough cool for 2 to 3 minutes.

Place a sheet of parchment paper on the counter. Place the dough on the parchment and place another sheet the same size on top. Using a rolling pin, roll the dough into a rectangle about 9 by 13 inches and ¼ inch thick. With a pizza cutter, cut the dough lengthwise into 1-inch strips. (If there is any leftover dough, roll it into a ball and bake it as a biscuit along with the pigs in a blanket.)

Wrap one strip of dough around one of the hot dogs in a spiral. Sometimes the dough can become sticky and hard to handle. I usually keep a dish towel nearby and dry my hands after wrapping each hot dog to minimize this.

Repeat to wrap all the hot dogs, placing each pig in a blanket on the prepared baking sheet. Bake for 20 minutes, until the crust becomes golden brown.

Serve with mustard, ketchup, or whatever condiments you like on the side.

Variation

Make small, appetizer-sized pigs in a blanket using cocktail hot dogs or sausages. Cut the dough into shorter lengths and wrap around each small hot dog. Bake as instructed in the recipe, checking at 15 minutes to make sure they don’t burn.
