Bacon-Wrapped Cod with Lemon-Caper Spinach

Bacon and fish are great flavor partners and this recipe is no exception. It’s a complete weeknight meal that will be ready in about 30 minutes.

Makes 2 servings

Pat the cod fillets dry with a paper towel and sprinkle with the salt and pepper. Wrap each fillet with 1 slice of bacon.

Melt the butter in a large skillet over medium heat. Add the bacon-wrapped fillets and cook until the fish flakes easily with a fork, 4 to 5 minutes on each side. Transfer the fillets to a plate.

Return the skillet to the heat. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Add the spinach, capers, and lemon juice and cook, stirring occasionally, until the spinach wilts, about 2 minutes.

Transfer the spinach to a serving plate and top with the cod fillets. Sprinkle with the lemon zest and serve.
