Parmesan Zucchini Crisps

This is one of my most simple recipes, but it really tastes great. Try other cheeses like an Italian cheese blend, cheddar, or Monterey Jack. Serve as a side dish or as an appetizer or snack.

Makes 4 servings

Preheat the oven to 425°F. Line a baking sheet with parchment paper or a silicone mat.

Cut the zucchini into ¼-inch-thick slices. Arrange on the prepared baking sheet and sprinkle with salt and pepper. Sprinkle the Parmesan evenly over the zucchini, making sure to cover each round.

Bake for 15 to 20 minutes, checking at 10 minutes and then every 5 minutes, until the cheese turns golden brown.

Serve with warmed marinara sauce on the side for dipping.
