Keto Bagels

Yes, bagels are still allowed! Choose your favorite bagel flavoring and press into the dough before baking. Toast the bagels, spread on a little cream cheese, and you’re in bagel heaven. Everything-but-the-bagel seasoning, a mixture of sesame seeds, poppy seeds, sea salt, dried garlic, and dried onions, is easy to find in the spice aisle at the grocery store.

Makes 6 bagels

Preheat the oven to 375°F. Line a baking sheet with parchment paper or a silicone mat. Have a sheet of parchment paper ready.

In a microwave-safe bowl, heat the mozzarella and cream cheese in the microwave oven until melted, 1 to 1½ minutes. Add the almond flour, baking powder, salt, and egg and stir together until just combined.

Turn the dough out onto the piece of parchment paper and knead until all the dry ingredients have fully combined and the dough is no longer sticky. Work quickly when kneading; the dough will stiffen up as it cools and can become very hard to knead. If that happens, reheat the mixture in the microwave for 30 seconds and continue kneading.

Divide the dough into six equal pieces. Roll each piece into a long, thick rope and press the ends together to form a circle. This dough will expand while baking, so be sure to leave a big enough opening in the center for a proper hole.

Sprinkle the tops of the bagels with any seasonings you choose. Be sure to press the seasonings into the dough a bit to make sure they stick. Bake for 11 to 13 minutes, until golden brown. Let the bagels cool for about 5 minutes to firm up before you cut them.
