Strawberry Frozen Squares

You’ll hear the raves with these squares!

1 cup flour

¼ cup packed brown sugar

½ cup chopped pecans

½ cup butter, melted

2 egg whites

1 cup sugar

1 tablespoon lemon juice

1 cup whipping cream, plus sugar to sweeten

2 cups sliced strawberries, or 1 (10-ounce) package frozen strawberries

In a bowl, combine flour, brown sugar, pecans, and butter. Press mixture onto greased baking sheet. Bake at 350 degrees for about 8 to 10 minutes, or until golden brown; remove from oven and cool. With a fork, break crust into crumbs. Sprinkle half of the crumbs into a greased 9x13-inch pan. Set remaining half aside.

In a large bowl, beat egg whites on high speed for about 5 minutes. Gradually add sugar and lemon juice. Beat 3 minutes more; set aside. In another bowl, whip and sweeten cream, then use a hand mixer to mix strawberries and whipped cream together. Gently fold strawberry mixture into egg-­white mixture; spoon evenly over crumbs. Sprinkle remaining crumbs over top. Freeze at least 6 hours before serving. Cut into squares. Makes about 12 servings.
