­Quesadillas

These are fast and fun.

4 ­eight-­inch tortillas

1 cup refried beans

2 cups grated Monterey Jack cheese

2 tablespoons chopped onion

¼ cup chopped cilantro (optional)

1 cup shredded chicken or beef (optional)

Sour cream, for garnish

Guacamole, for garnish

Salsa, for garnish

Place two tortillas on work surface. Spread equally with beans, cheese, onion, cilantro, and meat. Top with remaining two tortillas. Spray griddle or frying pan with cooking spray or olive oil. Toast over medium heat on each side. Cut into wedges and top with sour cream, guacamole, and salsa. Makes 4 servings.
