A sweet and spicy side dish.
6 apples (Rome beauties work well)
¼ cup cranberries
¼ cup walnuts
¼ cup packed brown sugar
¼ cup bread crumbs
1 teaspoon cinnamon
Zest of 1 lemon
3 tablespoons butter, melted
Core apples. Remove a ½-inch slice from the bottom of the apples so they will sit flat in a pan. Place in a greased baking dish and set aside. In a bowl, combine remaining ingredients. Stuff apples with mixture. Bake, covered with foil, at 375 degrees for about 25 minutes or until filling is cooked and bubbly. Makes 6 servings.
