OLD ENGLISH APPLE PIE

Pastry

2½ sticks (1¼ cups) unsalted butter

¾ cup sugar

1 egg

1 teaspoon vanilla paste

3 cups all-purpose flour

Filling

4 Granny Smith apples

½ cup granulated sugar

¼ cup Muscovado sugar

⅓ cup raisins

½ stick unsalted butter, melted and cooled

1 lemon, juice and zest

1 orange, juice and zest

½ teaspoon ground nutmeg

1 teaspoon ground cinnamon

1 egg, beaten

1. Preheat the oven to 350 degrees.

2. For the pastry, cream the butter and sugar until smooth, and add the egg and vanilla paste. Add the flour and blend until combined. Refrigerate for at least one hour.

3. For the filling, peel, core, and slice the apples. Place the apples in a large bowl, and add the granulated sugar, Muscovado sugar, raisins, melted butter, lemon and orange zests and juice, nutmeg, and cinnamon. Stir until combined.

4. Divide the dough in half. Roll out the bottom crust, and fit it into a 9-inch pie pan or a 9 × 1½-inch flan ring. Place the apple filling inside. Brush the edge of the pastry with the beaten egg. Roll out the top crust, place it on the bottom crust and trim the edges. Brush the remaining egg over the top of the pie. Bake in the center of the oven for 40 minutes, or until the pastry is golden brown.
