Saffron and Rose Tea

Ingredients
½ tsp saffron strands, plus extra to garnish
1½oz (45g) pink rose petals, plus extra to garnish
4 pieces star anise, plus extra to garnish
4 green cardamom pods, lightly crushed
4 tsp honey
2 tsp lemon juice
Method
1 In a saucepan, combine the saffron strands, rose petals, star anise, and cardamom pods with 5 cups (1.2l) of water and cook over medium-high heat. Bring to a boil, then remove from the heat.
2 Strain into 6 glasses. Stir 1 teaspoon of honey and ½ teaspoon of lemon juice into each glass.
3 Garnish with a few saffron strands, rose petals, and star anise and serve while hot.
