RICOTTA, PARMA HAM, AVOCADO AND CHILLI CROISSANTS

2 croissants, split open

4 tbsp ricotta cheese

2–4 slices of Parma ham

1 ripe avocado, pitted, peeled and sliced

a pinch of dried chilli/hot pepper flakes

sea salt and freshly ground black pepper

 

1 Preheat the oven to 200°C/400°F/gas 6.

2 Put the bottom half of the croissants on a baking sheet. Spread with the ricotta and top with the Parma ham, sliced avocado and chilli/hot pepper flakes. Season lightly with salt and pepper. Replace the tops. Bake for 4–5 minutes until heated through. Leave to cool slightly, then serve.
