1 lb. extra lean ground beef
1 onion, chopped
1 green pepper, chopped
10-oz. can diced tomatoes and green chiles
1 head cabbage, chopped
1 c. beef broth
8-oz. can pizza sauce
1 c. cooked brown rice
1/2 c. shredded reduced-fat Cheddar cheese
In a Dutch oven over medium heat, cook beef, onion and green pepper until beef is no longer pink; drain. Stir in tomatoes with juice, cabbage, broth and pizza sauce. Bring to a boil; reduce heat to low. Cover and simmer for 20 to 25 minutes, until cabbage is tender, stirring occasionally. Stir in rice; heat through. Remove from heat. Sprinkle with cheese; cover and let stand until cheese is melted.
Fresh herbs give a wonderful flavor boost! If a recipe calls for one teaspoon of a dried herb, simply substitute one tablespoon of the fresh herb. For best flavor, add them toward the end of the cooking time.
