10-oz. pkg. frozen chopped spinach, thawed and squeezed dry
16-oz. container reduced-fat small-curd cottage cheese
3 eggs, beaten
1/4 c. butter, melted
1 c. shredded reduced-fat Cheddar cheese
1 t. salt
1/2 t. pepper
In a large bowl, mix all ingredients until well blended. Pour into a greased 8" pie plate. Bake, uncovered, at 325 degrees for one hour, or until set. Cut into wedges to serve.
Bake a quiche in muffin or custard cups for oh-so simple portion control. When making minis, reduce the baking time by about 10 minutes, and slide a toothpick into each to check for doneness.
