1 lb. smoked turkey sausage, cut into bite-size pieces
4 redskin potatoes, cubed
16-oz. pkg. baby carrots
1 yellow squash, cut into 1-inch cubes
1 zucchini, cut into 1-inch cubes
1/2 c. red onion, thinly sliced
2 T. olive oil
salt, pepper, minced garlic, dried parsley and Italian seasoning to taste
Arrange sausage and vegetables on a long piece of heavy-duty aluminum foil coated with non-stick vegetable spray. Drizzle with oil. Sprinkle with desired seasonings. Seal edges of foil tightly to create a foil pack. Place on a heated grill and cook for about one hour, until all vegetables are tender.
Sliced mushrooms add savory flavor and extra bulk, but few calories. Feel free to add them generously to casseroles, stir-fries and pizza.
