1 t. soy sauce
2 T. apple juice
1/8 t. ground ginger
1/2 t. salt
pepper to taste
1/2 lb. boneless, skinless chicken breast, thinly sliced
1/4 c. peanut oil, divided
3 c. snow peas
1/2 c. celery, thinly sliced
5-oz. can sliced bamboo shoots, drained
1/2 c. green onions, thinly sliced
1/2 c. sliced mushrooms
1 c. chicken broth
In a bowl, whisk together soy sauce, juice and seasonings. Add chicken and turn to coat; let marinate 5 minutes. Heat 2 tablespoons oil in a large skillet over high heat. Stirring constantly, cook chicken mixture in oil for 5 minutes, or until cooked through. Remove chicken mixture and keep warm. Add remaining oil to skillet; stir in vegetables and broth. Cook over high heat for 5 minutes, stirring constantly. Add chicken mixture to skillet and cook an additional 5 minutes, stirring constantly.
