Makes 6 servings at
320 calories each
2 t. olive oil
2 c. smoked turkey sausage, diced
2 c. onions, chopped
4 c. chicken broth
8-oz. bottle clam juice
2 6-oz. cans chopped clams
1 lb. cod or halibut, cut into 1-inch cubes
15-oz. can chickpeas, drained and rinsed
1 sweet potato, peeled and diced
1 bay leaf
2 t. lemon juice
1/4 t. pepper
Heat oil in a large saucepan. Add sausage and onions; stir until onions soften. Stir in remaining ingredients except lemon juice and pepper. Simmer until fish flakes easily and sweet potato is tender, about 10 minutes. Discard bay leaf; stir in lemon juice and pepper.
