salt and pepper to taste

1 lb. sliced mushrooms

2 T. olive oil

Layer each slice with ham, mushrooms, cheese and onion. Place on an ungreased baking sheet. Broil under a preheated broiler, about 4 inches from heat, for one to 2 minutes, until lightly golden and cheese is melted. Top with remaining toast slices.

For the best results when using reduced-fat cheese, use very low heat, as high heat causes it to toughen. Reserve fat-free cheese for use in cold dishes like salads and deli sandwiches.
