Makes 4 servings at

2 T. reduced-fat mayonnaise
4 t. Dijon mustard
2 t. fresh dill, finely chopped
salt and pepper to taste
1 lb. sliced mushrooms
2 T. olive oil
8 slices rye bread, toasted
4 slices deli ham
4 slices reduced-fat Swiss cheese
4 thin slices red onion
In a small bowl, whisk together mayonnaise, mustard, dill, salt and pepper; set aside. In a skillet over medium-high heat, sauté mushrooms in oil, stirring occasionally, for 5 minutes, or until liquid evaporates. Remove from heat; drain. Spread 4 toast slices with mayonnaise mixture. Layer each slice with ham, mushrooms, cheese and onion. Place on an ungreased baking sheet. Broil under a preheated broiler, about 4 inches from heat, for one to 2 minutes, until lightly golden and cheese is melted. Top with remaining toast slices.
For the best results when using reduced-fat cheese, use very low heat, as high heat causes it to toughen. Reserve fat-free cheese for use in cold dishes like salads and deli sandwiches.
