1/2 lb. sliced deli roast beef, cut into thin strips
2 c. romaine lettuce, shredded
1 c. carrots, peeled and shredded
1 c. cucumber, thinly sliced
1/2 c. red onion, thinly sliced
1/3 c. crumbled feta cheese
3 T. pine nuts, toasted
4 pita rounds, halved and split
2 T. reduced-fat mayonnaise
2 T. low-fat milk
1 T. cider vinegar
In a bowl, toss together beef, vegetables, cheese and pine nuts. Spoon mixture equally into pita halves. In a small bowl, whisk together remaining ingredients; drizzle over pita filling.
Use mustard instead of mayonnaise on sandwiches for a big saving in calories.
