excluding optional toppings
1 head cauliflower, broken into flowerets
1-oz. pkg. ranch salad dressing mix
2 T. low-fat milk
3 T. butter
1 T. garlic, minced
Optional: reduced-fat sour cream, reduced-fat shredded Cheddar cheese, chopped fresh chives, sliced black olives, crisply cooked turkey bacon, red pepper flakes
Boil or steam cauliflower until fork-tender, about 20 minutes. Drain in a colander for at least 15 minutes, shaking several times. Transfer cauliflower to a food processor; add salad dressing mix, milk, butter and garlic. Process to the consistency of smooth mashed potatoes. Serve hot with desired toppings.
