Makes 36 cookies at
80 calories each
1 c. shortening
2 c. all-purpose flour
3/4 c. low-calorie powdered sweetener blend for baking
2 T. low-fat milk
1 T. unsweetened applesauce
1 egg, beaten
1 c. canned pumpkin
2 t. cinnamon
1 t. vanilla extract
1 t. baking powder
1 t. baking soda
1/2 t. salt
In a large bowl, combine all ingredients. Stir until well mixed. Drop by teaspoonfuls onto greased baking sheets. Bake at 375 degrees for 8 to 10 minutes. Cool on wire racks.
Oversize cookie bars are tempting, but for a change, slice them into one-inch squares and set them in frilly paper candy cups. Guests will feel free to sample “just a bite.”
