Makes 24 cookies at

3 to 4 egg whites
1/4 c. low-calorie powdered sweetener blend for baking
1/4 t. almond or vanilla extract
1/4 t. salt
14-oz. pkg. sweetened flaked coconut
In a large bowl, combine all ingredients except coconut. Beat with a wire whisk until frothy. Fold in coconut. Drop by tablespoonfuls, 2 inches apart, onto a parchment paper-lined baking sheet. Bake at 325 degrees for 20 to 25 minutes, until lightly golden, rotating baking sheet after 15 minutes. Cool completely; store in an airtight container.
Reduce the fat in a favorite recipe for cookies or quick bread. Just replace all or part of the fat with unsweetened applesauce. Canned pumpkin and strained prunes work well in brownie recipes too...try it and see which one you like best.
