1 c. diet lemon-lime soda
.3-oz. pkg. sugar-free strawberry gelatin mix
1 T. cornstarch
3 c. strawberries, hulled and sliced
2 pkts. no-calorie powdered sweetener for beverages
9-inch pie crust, baked
In a small saucepan over medium heat, combine soda, gelatin mix and cornstarch. Cook and stir over medium heat until slightly thickened. Add strawberries; bring to a boil. Cool slightly; stir in sweetener. Spoon into baked crust; cover and chill until set. Cut into wedges.
Serve up a light, cool fruit sorbet. In a food processor, combine a cup of frozen fruit cubes, a few ice cubes and a teaspoon or so of water. Process until smooth; add sweetener to taste and serve immediately. Yummy!
