Deb Wills: Survivor of 26 Years, and Avon Walker

Deb Wills is a 26-year survivor, and avid Walker (she’s done 13 Walks), and has so far raised $400,000 for the Avon Foundation, including more than $101,000 in 2012. She spoke at the Closing Ceremony of the Washington D.C. Walk in 2010.

Slow-Cooker Chicken Fricassee

Makes 4 servings • Prep Time: 15 minutes

Cooking Time: 4-6 hours • Ideal Slow-Cooker Size: 4-qt.

4 boneless, skinless chicken breast halves

1 can reduced-fat cream of chicken soup

½ soup can of water

2 medium carrots, peeled and cut into chunks

½ cup chopped onions

1 tsp. paprika

¾ tsp. dried thyme

1 tsp. dried rosemary

1 tsp. lemon juice

1 tsp. salt

¼ tsp. pepper

  1. Spray slow cooker with nonstick cooking spray.
  2. Place chicken in slow cooker.
  3. Mix remaining ingredients together in a bowl. Pour over chicken.
  4. Cover. Cook on Low 4-6 hours, or until chicken is tender but not dry and the vegetables are as tender as you like them.
  5. Serve over cooked noodles or rice.
