Dandelion and Arugula Salad

This refreshing nutrient dense salad is filled with vegetables found in late spring and throughout the summer. It has a nutty flavor with a slight burst of sweetness from the fresh raspberries.

Makes 2 servings

Ingredients:

1 cup of arugula

1 cup dandelion greens

1 cup spinach

½ cup fresh raspberries

½ avocado, sliced

½ cup hazelnuts, ground or chopped

2 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon lemon juice


 

Directions:

1.   Combine the greens, raspberries, avocado, and hazelnuts in a bowl.

2.   In a separate smaller bowl, mix together the oil, vinegar, and lemon juice.

3.   Toss salad with dressing. Enjoy.
