Papaya Salad

This salad was inspired by a beautiful papaya tree Dr. Price admired in West Africa. The combination of papaya, avocado, and lime will transport you to the tropics.

Makes 2 servings

Ingredients:

2 cups baby spinach

2 avocados, halved, peeled, and sliced

2 papayas, halved, peeled, and sliced

Dressing:

½ cup chopped fresh mint

1 lime, juiced

½ teaspoon salt

½ teaspoon tamari

¼ tablespoon olive oil


 

Directions:

1.   Cover a large plate with a bed of spinach and in a line down the center, alternate papaya and avocado slices.

2.   In a small bowl, whisk together mint, lime juice, salt, tamari, and olive oil.

3.   Coat the spinach, papaya, and avocado with the dressing.
