2 medium to large tomatoes
Iodized salt to taste
½ cup gluten-free bread crumbs
½ teaspoon dried basil
½ teaspoon dried oregano
1 teaspoon nondairy, non-soy margarine (we prefer Earth Balance)
⅓ cup shredded nondairy cheddar cheese
Preheat broiler.
1. Rinse tomatoes and cut in half, separating top and bottom. Remove stem. Season with salt. Arrange cut side up on a baking sheet lined with parchment paper or a lightly greased oven-safe dish.
2. In a bowl, combine bread crumbs, basil, and oregano. Sprinkle evenly over tomato halves.
3. Place ¼ teaspoon margarine on each half.
4. Place under broiler for four minutes. Tomatoes should be getting soft but not squishy, and topping should be browning but not burned. Sprinkle with cheese and broil until cheese is melted.
