Melon “Ice Cream”

This light dessert is perfect during the summer, when melon is plentiful and the weather is warm.

Equipment:

blender or immersion blender

Makes 4 servings

Ingredients:

½ honeydew or cantaloupe melon, fresh or frozen, no rind or seeds

1 cup vanilla-flavored nondairy milk

1½ cups ice, more as needed

Optional: ⅛ teaspoon ground ginger or cinnamon


 

Directions:

1.   Blend all ingredients until smooth.

2.   Serve immediately or “ice cream” will melt.
