Stir-fried Beans with Sprouts and Fresh Chili
2 tablespoons oil
1 onion, thinly sliced
2 cloves garlic, minced
500 g (1 lb) green beans, trimmed and cut into lengths
2 slices fresh ginger, cut into fine strips
1 red finger-length chili, deseeded and cut into thin strips
¼ teaspoon salt
1 teaspoon soy sauce
1 tablespoon rice wine
200 g (7 oz) bean sprouts
2 teaspoons black Chinese vinegar
2 teaspoons sesame oil Fresh coriander leaves, to garnish
Freshly ground black pepper, to taste
1 Heat the oil in a wok until very hot and stir-fry the onion, garlic, beans, ginger, and chilies for 30 seconds Add the salt, soy sauce, and wine and stir-fry for another 4 to 5 minutes.
2 Add the bean sprouts and stir-fry for 1 minute. Add the vinegar and cook for another 30 seconds. Add the sesame oil, stir to mix, remove from the heat, and transfer to a platter and garnish with the fresh coriander leaves. Sprinkle the pepper to taste.
