Lemonade with fresh mint and orange-blossom water

Mint is a very cooling herb, so this Asian-style lemonade helps to cool down on hot days. Never drink it ice cold as it will disturb the digestive fire.

Serves 4

4 tbsp finely chopped fresh mint, plus 4 sprigs, to garnish

11/4 pints (750ml) bottled, still spring water

8 tbsp lemon juice (or more, according to taste)

2 tsp orange-blossom water (or more, according to taste)

sweetener such as agave syrup, honey, or stevia, to taste

4 slices of lemon

1. Place the chopped mint in a heatproof container with a lid. Pour a little boiling water over the mint, cover, and let it brew for a few minutes. Pour through a sieve, retaining the liquid.

2. Mix the bottled spring water, the mint-flavored liquid, lemon juice, and orange-blossom water together in a large jug. Sweeten according to taste.

3. Put a sprig of fresh mint and one slice of lemon into each of 4 serving glasses, pour the lemonade over it, and serve.
