Filet Mignon Calzones

Like a cheesesteak, but a grilled gourmet version! These freeze well, so make enough so you can store some to heat up on a night when you don’t feel like cooking.

Serves 4

Ingredients

112 pounds pizza dough

2 tablespoons olive oil

12 cup onion, minced

1 tablespoon flour

12 cup beef broth

34 pound filet mignon, sliced thinly

4 slices white American cheese

  1. Roll the dough into 4 rounds, each 6–7 inches across.

  2. Heat the olive oil in a saucepan, then add the minced onion and sauté. Blend in the flour, then stir in the beef broth and cook until smooth.

  3. Add the filet and cook for 1 minute. Spoon the filling onto the bottom half of each calzone, adding one slice of cheese to each. Fold the top over and seal with a fork.

  4. Heat grill to high.

  5. Bake the calzones on a pizza stone in a covered grill for about 6 minutes or until very hot and golden brown.

Calzones as Fast Food

If you don’t mind dribbling down your front, you can eat them on the run — street food. The fillings vary in terms of cheeses, stews, sauces, and veggies. Some may be messier than others!
