Meaty Portobello Mushrooms

These mushrooms are wonderful warm sliced over salads, in sandwiches, and as part of an antipasto. They go well with roasted peppers and Gorgonzola cheese.

Serves 2

Ingredients

1 cup balsamic vinaigrette

2 large portobello mushrooms, 4–6 inches across

  1. Marinate the mushrooms for 1–2 hours in the balsamic vinaigrette.

  2. Heat grill to medium.

  3. Grill well above the coals for 3 minutes, turn, and grill for 3–4 more minutes. Give larger mushrooms an extra minute or two.

Protein in Mushrooms

Mushrooms are rich in protein as well as vital minerals. And the deliciousness of these big brown mushrooms makes them a meal or an asset to a meal. They are great baked and stuffed. Just use commercial stuffing and toss some pieces of chopped bacon on top before baking.
