Oregano Seasoned Potatoes

So easy, and so delicious! Make sure you opt for Yukon Golds as they really can stand up to the heat in ways that other varieties of spuds can’t.

Serves 4

Ingredients

4 Yukon Gold potatoes, scrubbed

4 tablespoons olive oil

4 teaspoons dried oregano

Salt and pepper to taste

  1. Set the grill to medium.

  2. Cut the potatoes in quarters, lengthwise, and place on a piece of heavy-duty aluminum foil.

  3. Drizzle with olive oil and sprinkle with oregano, salt, and pepper.

  4. Place on grill, lid closed, and let bake for 20 minutes; check often. They’re done when the outside is brown and crunchy and the inside is soft.
