Ingredients
4 Yukon Gold potatoes, scrubbed
4 tablespoons olive oil
4 teaspoons dried oregano
Salt and pepper to taste
Set the grill to medium.
Cut the potatoes in quarters, lengthwise, and place on a piece of heavy-duty aluminum foil.
Drizzle with olive oil and sprinkle with oregano, salt, and pepper.
Place on grill, lid closed, and let bake for 20 minutes; check often. They’re done when the outside is brown and crunchy and the inside is soft.
