Warm Caramel Pineapple

The caramel that forms on the grilled pineapples make them irresistible! You can serve with ice cream, but they are mouthwateringly good on their own….

Serves 4

Ingredients

14 cup dark corn syrup

2 tablespoons butter

1 tablespoon rum

4 thick slices fresh pineapple

  1. Bring the syrup and butter to a boil. Add the rum.

  2. Brush the pineapple rounds with the syrup mixture.

  3. Set grill to low.

  4. Grill the pineapple rounds until they start to get golden brown. Turn and grill for another few seconds. Serve immediately with ice cream or sorbet.
