Soft Scrambled Eggs

Like so much in life, the secret to making the world’s best eggs is to take your time. Go slowly. The day is ahead of you. Enjoy it.

3tablespoons unsalted butter

1tablespoon of olive oil

8large eggs

1teaspoon kosher salt

¼teaspoon freshly ground black pepper

Heat the butter and oil in a nonstick skillet over medium-low heat. Once the butter is melted, add the eggs into the pan.

Use a rubber spatula or whisk to break the yolks and scramble the eggs. Stir the eggs continuously until small curds start to form.

Season the eggs with the salt and pepper.

Continue stirring the eggs with a rubber spatula over a low heat until the eggs are soft but solidified, about 10 to 15 minutes. Turn the heat off. Serve warm.

Serves 3 to 4 people
