Pumpkin and Turmeric Smoothie

Who would’ve thought this golden garden dweller could make a scrumptious smoothie addition? In this delicious smoothie, pumpkin waves goodbye to the soup pot and the Sunday roast, taking centre stage in your blender.

375 ml (13 fl oz/1½ cups) coconut water

½ avocado, peeled and stone removed

125 g (4½ oz/½ cup) cooked pumpkin (winter squash)

1 teaspoon grated orange zest

1 teaspoon turmeric

½ teaspoon grated ginger

¼ teaspoon stevia powder, to sweeten

Place all the ingredients in a high-speed blender and blend for around 30–45 seconds until smooth.
