3 handfuls of baby spinach

MARINADE

1 tablespoon flaxseed oil

1 tablespoon apple cider vinegar

1 tablespoon wheat-free tamari

1 teaspoon rice malt syrup

1 teaspoon minced garlic

1 spring onion (scallion), thinly sliced

Combine the marinade ingredients in a small bowl and mix well.

Place the spinach leaves in a salad bowl, pour over the marinade and chill in the fridge for 15 minutes before serving.
