Spinach and Bacon Roll-ups
Prep time: 5 minutes | Cook time: 8 to 9 minutes | Serves 4
4 flour tortillas (6- or 7-inch size)
4 slices Swiss cheese
1 cup baby spinach leaves
4 slices turkey bacon
Special Equipment:
4 toothpicks, soak in water for at least 30 minutes
  1. On a clean work surface, top each tortilla with one slice of cheese and ¼ cup of spinach, then tightly roll them up.
  2. Wrap each tortilla with a strip of turkey bacon and secure with a toothpick.
  3. Arrange the roll-ups in the air fryer basket, leaving space between each roll-up.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 390ºF (199ºC), and set time to 8 minutes.
  5. After 4 minutes, remove the pan from the oven. Flip the roll-ups with tongs and rearrange them for more even cooking. Return to the oven and continue cooking for another 4 minutes.
  6. When cooking is complete, the bacon should be crisp. If necessary, continue cooking for 1 minute more. Remove the pan from the oven. Rest for 5 minutes and remove the toothpicks before serving.
