Eggs in Bell Pepper Rings
Prep time: 5 minutes | Cook time: 7 minutes | Serves 4
1 large red, yellow, or orange bell pepper, cut into four ¾-inch rings
4 eggs
Salt and freshly ground black pepper, to taste
2 teaspoons salsa
Cooking spray
  1. Coat the baking pan lightly with cooking spray.
  2. Put 4 bell pepper rings in the prepared baking pan. Crack one egg into each bell pepper ring and sprinkle with salt and pepper. Top each egg with ½ teaspoon of salsa.
  3. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 350ºF (180ºC) and set time to 7 minutes.
  4. When done, the eggs should be cooked to your desired doneness.
  5. Remove the rings from the pan to a plate and serve warm.
