Cheesy Breakfast Casserole
Prep time: 10 minutes | Cook time: 16 minutes | Serves 4
6 slices bacon
6 eggs
Salt and pepper, to taste
Cooking spray
½ cup chopped green bell pepper
½ cup chopped onion
¾ cup shredded Cheddar cheese

Place the bacon in a skillet over medium-high heat and cook each side for about 4 minutes until evenly crisp. Remove from the heat to a paper towel-lined plate to drain. Crumble it into small pieces and set aside.

Whisk the eggs with the salt and pepper in a medium bowl.

Spritz the baking pan with cooking spray.

Place the whisked eggs, crumbled bacon, green bell pepper, and onion in the prepared pan.

Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 400ºF (205ºC) and set time to 8 minutes.

After 6 minutes, remove the pan from the oven. Scatter the Cheddar cheese all over. Return the pan to the oven and continue to cook for another 2 minutes.

When cooking is complete, let sit for 5 minutes and serve on plates.
