Maple Walnut Pancake
Prep time: 10 minutes | Cook time: 20 minutes | Serves 4
3 tablespoons melted butter, divided
1 cup flour
2 tablespoons sugar
1½ teaspoons baking powder
¼ teaspoon salt
1 egg, beaten
¾ cup milk
1 teaspoon pure vanilla extract
½ cup roughly chopped walnuts
Maple syrup or fresh sliced fruit, for serving
  1. Grease the baking pan with 1 tablespoon of melted butter.
  2. Mix together the flour, sugar, baking powder, and salt in a medium bowl. Add the beaten egg, milk, the remaining 2 tablespoons of melted butter, and vanilla and stir until the batter is sticky but slightly lumpy.
  3. Slowly pour the batter into the greased baking pan and scatter with the walnuts.
  4. Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 330ºF (166ºC) and set time to 20 minutes.
  5. When cooked, the pancake should be golden brown and cooked through.
  6. Let the pancake rest for 5 minutes and serve topped with the maple syrup or fresh fruit, if desired.
