Egg and Avocado Burrito
Prep time: 10 minutes | Cook time: 4 minutes | Serves 4
4 low-sodium whole-wheat flour tortillas
Filling:
1 hard-boiled egg, chopped
2 hard-boiled egg whites, chopped
1 ripe avocado, peeled, pitted, and chopped
1 red bell pepper, chopped
1 (1.2-ounce / 34-g) slice low-sodium, low-fat American cheese, torn into pieces
3 tablespoons low-sodium salsa, plus additional for serving (optional)
Special Equipment:
4 toothpicks (optional), soaked in water for at least 30 minutes

Make the filling: Combine the egg, egg whites, avocado, red bell pepper, cheese, and salsa in a medium bowl and stir until blended.

Assemble the burritos: Arrange the tortillas on a clean work surface and place ¼ of the prepared filling in the middle of each tortilla, leaving about 1½-inch on each end unfilled. Fold in the opposite sides of each tortilla and roll up. Secure with toothpicks through the center, if needed.

Transfer the burritos to the air fryer basket.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 390ºF (199ºC) and set time to 4 minutes.

When cooking is complete, the burritos should be crisp and golden brown.

Allow to cool for 5 minutes and serve with salsa, if desired.
