Baked Avocado with Eggs

1 large avocado, halved and pitted
2 large eggs
2 tomato slices, divided
½ cup nonfat Cottage cheese, divided
½ teaspoon fresh cilantro, for garnish

Line the baking pan with aluminium foil.

Slice a thin piece from the bottom of each avocado half so they sit flat. Remove a small amount from each avocado half to make a bigger hole to hold the egg.

Arrange the avocado halves on the pan, hollow-side up. Break 1 egg into each half. Top each half with 1 tomato slice and ¼ cup of the Cottage cheese.

Slide the baking pan into Rack Position 1, select Convection Bake, set temperature to 425ºF (220ºC) and set time to 9 minutes.

When cooking is complete, remove the pan from the oven. Garnish with the fresh cilantro and serve.
