Blistered Shishito Peppers with Lime Juice
Prep time: 5 minutes | Cook time: 9 minutes | Serves 3
½ pound (227 g) shishito peppers, rinsed
Cooking spray
Sauce:
1 tablespoon tamari or shoyu
2 teaspoons fresh lime juice
2 large garlic cloves, minced
  1. Spritz the air fryer basket with cooking spray.
  2. Place the shishito peppers in the basket and spritz them with cooking spray.
  3. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Roast, set temperature to 392ºF (200ºC), and set time to 9 minutes.
  4. Meanwhile, whisk together all the ingredients for the sauce in a large bowl. Set aside.
  5. After 3 minutes, remove from the oven. Flip the peppers and spritz them with cooking spray. Return to the oven and continue cooking.
  6. After another 3 minutes, remove from the oven. Flip the peppers and spray with cooking spray. Return to the oven and continue roasting for 3 minutes more, or until the peppers are blistered and nicely browned.
  7. When cooking is complete, remove the peppers from the oven to the bowl of sauce. Toss to coat well and serve immediately.
