Butternut Squash Croquettes
Prep time: 5 minutes | Cook time: 17 minutes | Serves 4
¹⁄₃ butternut squash, peeled and grated
¹⁄₃ cup all-purpose flour
2 eggs, whisked
4 cloves garlic, minced
1½ tablespoons olive oil
1 teaspoon fine sea salt
¹⁄₃ teaspoon freshly ground black pepper, or more to taste
¹⁄₃ teaspoon dried sage
A pinch of ground allspice
  1. Line the air fryer basket with parchment paper. Set aside.
  2. In a mixing bowl, stir together all the ingredients until well combined.
  3. Make the squash croquettes: Use a small cookie scoop to drop tablespoonfuls of the squash mixture onto a lightly floured surface and shape into balls with your hands. Transfer them to the basket.
  4. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 345ºF (174ºC), and set time to 17 minutes.
  5. When cooking is complete, the squash croquettes should be golden brown. Remove from the oven to a plate and serve warm.
