Balsamic-Glazed Carrot s
Prep time: 5 minutes | Cook time: 18 minutes | Serves 3
3 medium-size carrots, cut into 2-inch × ½-inch sticks
1 tablespoon orange juice
2 teaspoons balsamic vinegar
1 teaspoon maple syrup
1 teaspoon avocado oil
½ teaspoon dried rosemary
¼ teaspoon sea salt
¼ teaspoon lemon zest
  1. Put the carrots in the baking pan and sprinkle with the orange juice, balsamic vinegar, maple syrup, avocado oil, rosemary, sea salt, finished by the lemon zest. Toss well.
  2. Slide the baking pan into Rack Position 2, select Roast, set temperature to 392ºF (200ºC), and set time to 18 minutes.
  3. Stir the carrots several times during the cooking process.
  4. When cooking is complete, the carrots should be nicely glazed and tender. Remove from the oven and serve hot.
