Cinnamon-Spiced Acorn Squash
Prep time: 5 minutes | Cook time: 15 minutes | Serves 2
1 medium acorn squash, halved crosswise and deseeded
1 teaspoon coconut oil
1 teaspoon light brown sugar
Few dashes of ground cinnamon
Few dashes of ground nutmeg
  1. On a clean work surface, rub the cut sides of the acorn squash with coconut oil. Scatter with the brown sugar, cinnamon, and nutmeg.
  2. Put the squash halves in the air fryer basket, cut-side up.
  3. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 325ºF (163ºC), and set time to 15 minutes.
  4. When cooking is complete, the squash halves should be just tender when pierced in the center with a paring knife. Remove from the oven. Rest for 5 to 10 minutes and serve warm.
