Roasted Vegetable Mélange with Herbs
Prep time: 10 minutes | Cook time: 16 minutes | Serves 4
1 (8-ounce / 227-g) package sliced mushrooms
1 yellow summer squash, sliced
1 red bell pepper, sliced
3 cloves garlic, sliced
1 tablespoon olive oil
½ teaspoon dried basil
½ teaspoon dried thyme
½ teaspoon dried tarragon
  1. Toss the mushrooms, squash, and bell pepper with the garlic and olive oil in a large bowl until well coated. Mix in the basil, thyme, and tarragon and toss again.
  2. Spread the vegetables evenly in the air fryer basket.
  3. Put the air fryer basket on the baking pan and slide into Rack Position 2, select Roast, set temperature to 350ºF (180ºC), and set time to 16 minutes.
  4. When cooking is complete, the vegetables should be fork-tender. Remove from the oven and cool for 5 minutes before serving.
