Roasted Bell Peppers with Garlic
Prep time: 10 minutes | Cook time: 22 minutes | Serves 4
1 green bell pepper, sliced into 1-inch strips
1 red bell pepper, sliced into 1-inch strips
1 orange bell pepper, sliced into 1-inch strips
1 yellow bell pepper, sliced into 1-inch strips
2 tablespoons olive oil, divided
½ teaspoon dried marjoram
Pinch salt
Freshly ground black pepper, to taste
1 head garlic

Toss the bell peppers with 1 tablespoon of olive oil in a large bowl until well coated. Season with the marjoram, salt, and pepper. Toss again and set aside.

Cut off the top of a head of garlic. Place the garlic cloves on a large square of aluminum foil. Drizzle the top with the remaining 1 tablespoon of olive oil and wrap the garlic cloves in foil.

Transfer the garlic to the air fryer basket.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Roast, set temperature to 330ºF (166ºC) and set time to 15 minutes.

After 15 minutes, remove from the oven and add the bell peppers. Return to the oven and set time to 7 minutes.

When cooking is complete or until the garlic is soft and the bell peppers are tender.

Transfer the cooked bell peppers to a plate. Remove the garlic and unwrap the foil. Let the garlic rest for a few minutes. Once cooled, squeeze the roasted garlic cloves out of their skins and add them to the plate of bell peppers. Stir well and serve immediately.
