Fried Root Vegetable Medley with Thyme
Prep time: 10 minutes | Cook time: 22 minutes | Serves 4
2 carrots, sliced
2 potatoes, cut into chunks
1 rutabaga, cut into chunks
1 turnip, cut into chunks
1 beet, cut into chunks
8 shallots, halved
2 tablespoons olive oil
Salt and black pepper, to taste
2 tablespoons tomato pesto
2 tablespoons water
2 tablespoons chopped fresh thyme

Toss the carrots, potatoes, rutabaga, turnip, beet, shallots, olive oil, salt, and pepper in a large mixing bowl until the root vegetables are evenly coated.

Place the root vegetables in the air fryer basket.

Put the air fryer basket on the baking pan and slide into Rack Position 2, select Air Fry, set temperature to 400ºF (205ºC) and set time to 22 minutes.

Stir the vegetables twice during cooking.

When cooking is complete, the vegetables should be tender.

Meanwhile, in a small bowl, whisk together the tomato pesto and water until smooth.

When ready, remove the root vegetables from the oven to a platter. Drizzle with the tomato pesto mixture and sprinkle with the thyme. Serve immediately.
